After the birth of my first child in 2000, I was elated, albeit a little overwhelmed with this little bundle of joy! There just seemed like there was so much to do, to organise, to think about! I soon settled into a good routine with him, finding my feet in my new role as a mother, enjoying all the different stages of his development. However, looking back at that time in my life now, I didn’t take good care of myself physically, mentally or spiritually. Eating seemed to be on the go, whatever was handy, something for a quick energy boost to combat the tiredness of night feeds and lack of sleep. Exercise was non-existent and my spiritual side got neglected. Within 6 months I started to feel quite unwell, and I became a total hypochondriac! After all, I had a little person depending on me now and I HAD to be well! After some consultations, I began to take better care of myself, it was a bit of a wakeup call I can tell you! I began to eat better, exercise and relax more, recognising that my wellbeing was just as important as the wellbeing of my little baby!

Fast forward on 3 years from the date of my first born (yes they both have the same birth date!), and my second little bundle of joy came rocking into the world, all pink this time, yes a girl! How happy do you think I was with this news, how blessed were myself and my husband to have a healthy boy AND a healthy girl, you would think we won the lottery! The excitement was high, and lasted a while. That was until I started to feel unwell again, this time it was more emotionally. Long story short, I was diagnosed with post-natal depression and prescribed anti-depressants. They did give me relief from my symptoms but they also seemed to numb my emotions, everything seemed the same.

After being on this cycle for a while, I wondered if this was how I was going to live for the rest of my life. I was constantly looking for ways to create some excitement – when could we go on holidays, where could we go, what could we do, what could we buy? I attended counselling. I also did a lot of comfort eating during this time, looking for sweetness and pleasure in all the external things. My life was full of unhealthy choices. What was I going to do, how could I do something about it?

And then, a light appeared! You see, when you ask the question, the answer appears! I began to read again, something I loved to do in my younger days but hadn’t treated myself to this luxury for a long time. At first, it was romantic novels, a means of escape from my head into an imaginary world! I could feel a shift, I began to actually look forward to it. I decided, on medical supervision, to start to come off my medication. I took it slowly, journaling my progress and I did it! And I haven’t looked back! My world began to change, because I began to change! I started to make better choices for myself and my life, I began to read self-help and motivational books, and I explored my spiritual essence. My diet changed to a healthier one, and my exercise increased! I went for massages and relaxation sessions, making sure to take care of myself on all levels.

This is when I began to take a real interest in how you can actually turn your life around by using many transformation tools for body, mind and spirit. Your life really is a culmination of these three areas, and a balance is essential in each of these for healthy and happy living! I attended a health consultant and learned all about what foods are highly beneficial for me, and I met a Life Mentor who showed me how to harness my mind and energy to create the life of my dreams. Once I began to make changes in these areas of my life, I began to naturally make conscious decisions for myself and also my family environment! You could say that my life completely transformed bit by bit, day by day, sometimes hour by hour. It was a process, one that anyone can follow, one that is achievable by anyone. If I can do it, anyone can do it!

I decided, I committed, I dreamt, I did, I achieved, I am thriving. I lost 60lbs, I recovered from many different physical ailments, I gained heaps of energy and enthusiasm and I continue to reach for new goals and dreams every day. I love life! It has never been about weight loss, it has always been about feeling happy and healthy. It was really a very natural process, once I decided. I developed a deep sense of respect and love for my life and my body, I eased into it both gently and with great gusto. I realised that if I wanted to have the energy to be the person I wanted to be, to do the things I wanted to do, to follow my passion and fulfil my purpose, it was vital that I fell in love with myself and treated my body, mind and soul with the utmost care. I stopped judging myself and started loving me.

I continue on my Journey to Wellbeing every minute of every hour of every day and I love discovering new things about myself. I love sharing this journey with others and I love that every day you get to start fresh and I love seeing others thrive! I feel excited about my life and how it is unfolding! I run a successful business offering inspiration through my writing, mentoring programmes and products, with more expansion planned for the future! Lots of my visions and dreams have come to life! You see, I recognise that self-care is crucial to living a happy life, that looking after your body is giving you the best possible foundation for creating the life of your dreams, that taking care of your mind is vital for positive living and that connecting with your inner essence/spirit is the key to bringing it all together! Life really is as amazing as you allow it to be. Nothing changes until YOU decide to change, it all starts from within! The more you start making conscious decisions about your life, having deliberate awareness of your thoughts, choices and actions physically, mentally and spiritually, the more you will see the impact they have on your life. Balance in these three areas is key to living a healthy and happy life!

This is my passion. This is my purpose. This is for sharing.

THE BUFFET OF LIFE

We are all in this together. You, me, and everyone else. What a beautiful big buffet of life. Each day as we wake up, the table is laid in front of us with every imaginable colour, taste, shape and size of people, places, emotions, experiences … Where is your eye drawn to? What are you wanting to taste? When will you choose it? What feels good to you?

Every second you are focusing on some part of the buffet. Every moment you are offered a choice as to what you give your attention to. Sometimes it seems ‘just perfect’, other times it seems totally ‘gone off’, what the heck?! Sometimes we keep going to the same section of the buffet, over and over again, choosing the same things over and over again! What are we missing, oh my goodness! It is maybe a safe option to continue revisiting the familiar, but what if we dared to take a look at something else? What if, right next to this, there is something new, colourful, exotic? What if it opened up a whole new level of our senses? What if we found a new aspect of life, a new aspect of ourselves?!

It has been my own personal experience that the only thing that stops me from looking at a new part of the buffet of life is ME! I have showed up for 16,947 days so far, that’s a lot of buffets! And guess what! The buffet has expanded and expanded every day, in fact it is absolutely limitless, it’s stretches to infinity and beyond! YOU, ME AND EVERYONE get to choose in every second of every minute of every day WHERE WE WISH AND INTEND TO PUT OUR FOCUS! And, isn’t it interesting that what we think is the best part of it, is not for someone else! And we try to get others to come over here and taste our part, oh it’s the best , oh it’s the greatest, oh it’s just the perfect thing for everyone! Then we try to convince them that what they are experiencing and focusing upon is not right, it can’t be as good as this! Here’s the interesting part … what others are focusing upon is what they are choosing, just like what we are focusing upon is what we are choosing. It’s all offered in the buffet, every bit of it.

So, relax, let go and let the whole thing flow. Can you feel the relief in that? We are all doing the best we can in every given moment, until we can choose differently and move in another direction. We all experience love, along with every other emotion, YES, we’re all human, it’s normal. And, yes, we are PART of the buffet, we are on the table! So instead of trying to get others to choose what we are choosing, JUST BE PART OF THE BUFFET!

Every part offers a contrast in order to launch new desires, and allows creation to continue and expand … wow! Gotta love life eh?!

POWERFOOD VEGAN BREAD

I absolutely love bread so I wanted to create a recipe that was full of goodness as well as suiting all types of diet choices! So here is my powerfood product! When baked and cooled, it can be topped with loads of different varieties such as basil, spinach and garlic pesto, or tomato and pinenut sauce, avocado, or maybe a delicious homemade nut butter, yummy!

INGREDIENTS (makes one loaf)

1 cup buckwheat flour

1 cup quinoa flakes (you can use oat flakes if you prefer)

Half cup ground almonds

Half cup flaxseeds (whole or milled)

Half cup sunflower seeds

1 cup pumpkin seeds

2 heaped tbsp chia seeds (whole)

1 tsp bread soda (gluten free)

Half tsp baking powder (gluten free)

2 cups cold water

* 3 tbsp psyllium husk powder (I made mine without this also and it held together well, so if you don’t have it, you can try it without it)

Optional

Pinch of pink himalayan salt

2 tbsp of mixed dried herbs

METHOD

Blend pumpkin seeds and sunflower seeds together until milled.

Place buckwheat flour, almond flour and quinoa flakes in a bowl, together with bread soda/baking powder.

Add chia seeds, flaxseeds and milled pumpkin/sunflower seeds into the mix and stir together.

Slowly add the water, stirring all the time. If it gets too moist, just add some extra buckwheat flour to bind.

Put the mix in a greasproof lined baking tin and leave to sit for an hour.

Preheat oven to 350/180 Degrees.Then, pop in the oven and bake for 1 hour, testing with a skewer to make sure its fully cooked.

Remove from tin and cool on wire tray. Then, slice and cover with your favourite topping!

BANANA MUFFINS (GLUTEN FREE,  WHEAT FREE AND REFINED SUGAR FREE)

What a healthy treat for all the family, delicious, and so easy to make! These nutritious nibbles are gluten free, wheat free and refined sugar free!

Ingredients (makes 8 medium sized muffins, increase as desired):

1 egg

2oz Xylitol

1 large ripe banana

2oz full fat butter

3oz Rice Flour

1/2 tsp baking powder (gluten free)

1/2 tsp bicarbonate of soda (gluten free)

(Optional: Add 2 tsp chia seeds if desired for extra energy boost)

Method:

Beat egg and sugar together in bowl. Melt butter and mash banana. Add these to the egg/sugar mix. Then sift in the flour, baking powder and bicarbonate of soda, stirring until just combined.

Fill muffin cases 3/4 full, and place sliced banana pieces on top. Bake at 180 degrees C for 20 minutes, until golden brown.

Cool on a wire tray and serve with a smile! Store in an airtight container for 2 days.

PORRIDGE AND NATURAL YOGHURT BREAD

This bread is both delicious and nutritious, and it is so easy to make! It is also gluten free, wheat free and dairy free!

Ingredients:

1 x 500g Pot of Organic Natural yoghurt

2 x 500g (Fill empty Yoghurt Pot) Gluten free oat flakes

1 x Freerange/Organic Egg

1 teasp Bicarbonate of Soda

Pinch of salt (Pink Himalayan if possible)

Optional: Ground pumpkin seeds, sesame seeds, sunflower seeds, chia seeds

*I have also made this recipe using Quinoa Flakes and Soya Yoghurt, equally delicious!

Method:

Beat egg in a bowl. Add yoghurt, and then add oat flakes, bicarbonate of soda and salt. Mix all together and then pour into greaseproof lined baking tin. Bake in preheated oven at 200 degrees C for 20 minutes, and then at 180 degrees C for a further 25 minutes, removing from the tin for the last 10 minutes. Cool on a wire tray, wrap in greaseproof paper and store in fridge. Use within 2 days.

This recipe contains lots of fibre, which is great for healthy living! The fibre in oats is soluble which can be digested by the body and can help to reduce the amount of cholesterol that is in the blood. Soluble fibre dissolves in the gut to form a jelly like substance. This fibre slows down the release of glucose into the blood stream. Soluble fibre in oats help slow the digestion of food and therefore slow the blood sugar response. Insoluble fibre can’t be digested, so it passes through your gut without being broken down, and it helps other foods to move through your digestive system more easily.

CONSCIOUS LIVING

A lot of people are asking me about my recent 30 Day Detox so I thought I would put it in a blog for you! I think it is important to highlight the reason why I did it, your ‘WHY’ is key in motivating you to do anything, it makes it so much easier and enjoyable! You have to WANT to do it, to be ready!
So, here goes …

I had a wonderful start to 2015, setting new goals and attending Showcase Ireland at the end of January in Dublin, Ireland, networking with so many amazing people and meeting new and potential new customers. Upon returning home, I was all ready to continue my momentum but my body had other ideas! Guess what, I got the mother of all influenzas which kept me under the weather for 5 weeks, something that has never happened to me before! Needless to say, I overindulged in some ‘sweetness’ and handy nibbles to help me feel better which really didn’t do any good for my symptoms!

Anyhow, four weeks ago I woke up and decided that it was time to get back on track, and one of the areas I wanted to address was my diet. I decided to do a 30 Day Detox, do a clean sweep. I have done this detox before, and having followed Dr. Peter J. D’Adamo’s Eat Right For Your Blood Type in the past, I know what suits my body. I find it is a powerful tool to allow my body to come back into balance, and I love the feeling of my cells literally zinging with energyI I had a deep desire to feel vibrant, healthy and energised again and that was my ‘WHY’! And after all, your body is your temple for your earthly journey, it is your home for your life, so it makes good sense to look after it and treat it well!

So, basically, I just tuned into what felt right for me to do. It is very important that you feel good about what you are eating and drinking during your detox, and always! Guess what my first thing was to ditch … of course, sugar! I also cut out tea/coffee, wheat, most dairy, certain meats and alcohol. I consciously choose to eat superfoods like heaps of vegetables in juices, soups, salads and stirfrys, smoothies, fish, chicken, brown rice, eggs, nuts, seeds and LOTS and LOTS of water to flush out any toxins being released during the detox. I also take supplements on a daily basis. I am now intending to continue on my conscious eating journey, having done it before, I know the absolute benefits there are in doing so. Trying out new recipes and using a natural sugar substitute in baking makes the path fun, you don’t really feel like you are missing out on anything, and the FEEL GOOD FACTOR outweighs anything else!

Of course there are other factors to feeling really good and to living consciously, it is a combination of body, mind and spirit …

WHO ARE YOU?

Any time we hear these three words, a lot of us just want to run, run as far away as possible from them and pretend that we never heard them! These three words can be the scariest words for us because they stop us in our tracks and make us contemplate our lives, what we are doing, where we are going, who we are and who we are becoming! Gulp! If we take a look, are we going to be happy with what we find? Oh dear! Well, how will we know if we don’t take the time to look?! I know that there have been many times in my life that I felt lost and afraid, seeming to wander from moment to moment and staring at the Fear Monster, believing he is real, not being brave enough to look him straight in the eye and say “Hey, I’m not afraid of you any more, I know that you are not real and you are out of here!” Let’s face it, we all know what this feels like. However, if you are willing, with an open heart, to take a chance and spend some time getting to know yourself, I guarantee you will be very pleased with what you find!

So, where would you start to get to know yourself! People can spend so much time looking at others around them, wanting to be like them, wishing they had what others have, trying to imitate them, they know other people better than then know themselves! It’s time to start investing time into who you are, what your gifts and talents are, what your dreams and desires are, what way you wish your life to look like! A lot of people complain about their lives and all the things that are wrong with them but they don’t want to do anything about it! It seems easier to just stay the way it is, it’s too uncomfortable to change! And I know that sometimes life is not easy, but no matter how your life looks like right now, YOU have the ability to define YOUR value, YOU have the ability to define YOUR dreams, YOU have the ability to define YOUR LIFE!

So, are you ready to invest some time into seeing yourself, possibly for the first time in your life, discovering the person that you are meant to be, revealing the REAL YOU?! It takes a commitment to doing this, because you will come up with all the excuses of the day, all the ‘musts’ and ‘shoulds’ that you need to be doing something else, you’re so busy doing things you don’t like doing in order to keep on living and doing the things you don’t like doing. Ask yourself the question “What would I like to do if money were no object”, how would you really enjoy spending your life? Everybody should treat themselves to this kind of contemplation, because this is the key to finding your treasure!

So what type of person do you feel you are, who are YOU? What do you dream off? How does the world benefit from YOUR presence in it? What makes YOU come alive? Make a list of all the things you love about your life and that you are grateful for, what your strengths are, what you love to do, the type of people you like to be around, the kind of career you see yourself thriving in, the experiences you would love to have, the physical environment you enjoy the most! Start to form a vision of what you wish your life to look like, with YOU right in the centre of it!

And when you have defined who you are and what your life represents to you, what your true purpose and calling is, when you have seen it for yourself, RUN towards it and embrace it and watch as your life takes on a whole new meaning! You will start to align yourself with people on your wavelength, you will grow and expand in every moment, you will represent possibilities, you will become the person that you were meant to be! You don’t have to be concerned with pleasing others in this process, you only have to be concerned with BEING YOURSELF!

So, are you ready to take the first step? I would like to invite you to ask yourself the question “WHO AM I?” Thank you and I look forward to hearing from you!
